It may quite easily be my favorite time of year, Crockpot season.

When the calendar flips to September many things start to happen. Football season is underway, the temperatures start to fall, hunting seasons begin and the crockpot comes out.

I'm not one to share all the exciting things I cook, because I'm a guy that lives by the KISS (Keep It Simple Sir) way of life. If I can throw chicken or a burger in the air fryer and call it dinner, that's exactly what I'm doing.

The one thing I take seriously in the kitchen is chili.

Chili for me is a process. I think we can all agree that chili the next day is the best chili. Because this if fact, I always try to make my chili the day before I'm going to have it. It doesn't always work out like that, though. When the smell fills the house, it's hard to lay off. The recipe I've giving you now is my 'college football game day' recipe, so it's all done in the same day. Luckily there's always some left over for 'NFL football game day', so it's even better.

Yes, there's beans in this chili

Let's just get this out of the way...In my kitchen, chili has beans. I know this is a sensitive subject and friends have been lost over the argument, but my chili has beans.

My chili ingredients are pretty straight forward, nothing too crazy in this crockpot of chili. Shoot, sometimes a crockpot isn't even needed, just a plain old pot.

Simple Directions and Ingredients

Again, this is really simple. Some folks have way overboard chili recipes that have many different ingredients and add some interesting things...not this one. There's no 'secret' to my chili...KISS.

 Ingredients

  • 1lb burger
  • 1lb sausage
  • 1 pack regular chili mix
  • 1 pack hot chili mix
  • 1 can of hot Ro Tel
  • 1 large can of hot chili beans
  • 1 large can of regular chili beans
  • 2 small cans of kidney beans
  • 3 tablespoons of chili powder
  • 1/2 yellow onion
  • 2 tablespoons hot sauce
  • 1  jalapeño
  • 3 cups tomato juice

Directions

 On Stove

  1. brown the burger and sausage (separately is easier)
  2. combine the meat with the chopped up jalapeño, onion and add both chili mixes (let simmer until the onion is soft(ish)
  3. add Ro Tel (give it a few minutes to get to know each other)

In the crock pot 

  1. add the all the beans
  2. add the meat greatness you've just concocted
  3. add the chili powder
  4. add the hot sauce
  5. add the tomato juice

Cooking Time

  1. Crank the crockpot to high until you can't stand how good it smells.
  2. Taste it.
  3. Add more chili powder if desired.
  4. Turn the crockpot to low and let it really fill the house with the smell.
  5. Since it's game day, there's a good chance you're already eating it and that's ok.

 

Alternative Ending

IF you want to get wild and crazy, when you get to the 'taste it' phase, add in cut up hot dogs. I know, it's sounds weird...BUT, it's really good.
